What is the proper percentage to tip a waiter at a fine dining buffet?

We are going to a fine dining buffet brunch, there will be 14 of us.
What percentage should the tip be?

15% for normal service. 20% for exceptional service. Less for poor service. And nothing if gratuity is added to the bill.

Diary of a Foodie

You know, I don’t think I’ve ever really referred to myself as a foodie.

Sure, I like food — love it, actually.

I’m a Food Network junkie; I sit up and take note whenever chefs like Ferran Adria and Thomas Keller are mentioned; like Julia Child, I methodically apply myself in the kitchen to find out what works and what doesn’t with a dish; and I love to eat.

I guess, though, that whenever I hear the term “foodie,” I think back to a discussion I had with SA, whose brother once joined a group of self-proclaimed foodies who met through some message board.

“They weren’t real foodies,” she said. “They were the sort of people who thought the buffet at the Mandarin was authentic Chinese food.”

SA, on the other hand, was a connoisseur of fine dining who seemed to really know what she was eating and what was good about it.

I guess, when I think “foodie,” Jeffrey Steingarten’s grumpy face pops into my head.

What makes a person a foodie, though?

According to Wikipedia, foodies “are amateurs who simply love food for consumption, study, preparation, and news. Gourmets simply want to eat the best food, whereas foodies want to learn everything about food, both the best and the ordinary, and about the science, industry, and personalities surrounding food. For this reason, foodies are sometimes viewed as obsessively interested in all things culinary. There is also a general feeling in the culinary industry that the term gourmet is outdated. “Foodie-ism” is a modern, popular way of engaging food culture for the general population.”
